What’s for Dinner {This Week}

Okay. I am embarrassed even to post this I am sooo phoning it in this week. Erm. Literally. Here’s what we’ve done:

Monday: Dad and Glenn went to a conference so Mom and I had sandwiches and leftover potato salad. Watch out, Julia Child, I’m coming for you.

Tuesday: Pork chops. That’s where I started and all I had. So I stopped at our closest produce stand and got some salad greens and broccoli and some absolutely yumalicious balsamic vinaigrette. I threw some potatoes in the oven and pan-fried the pork chops before I doused them, liberally, in the dressing. Simple and good.

Wednesday: Take out from The Original Taco House. If you haven’t been there, give it a try. It has kind of an odd vibe when you first walk in. (Fun house mirrors, really? Don’t you want to make me look THIN when I am coming in so I’ll eat a lot?!?) But the food is super delicious. Especially the salad dressing. And if you live in Oregon, check the refrigerated salad dressing section at your local market, chances are you’ll find it there. I promise, you won’t be sorry.

Thursday: My MIL was here. It’s become our tradition to watch a Gaither Homecoming video after dinner. (It’s a nice alternative to Dad’s sports and more engaging for all of us.) This week’s episode (the last of our currently held installments!) was filmed in Maui. So in keeping with our theme we had Hawaiian Chicken with pineapple and sticky rice and I made a purchased bag-salad that was cabbage and wontons and some kind of yummy sesame dressing.

Friday: Tonight we’re working late so Mom and Dad are on their own and we’ll get take out at the shop.

Saturday: I’m thinking eggs and bacon and pancakes. I love pancakes but Glenn will never choose them for actual breakfast. At dinner though, if I offer some protein too, he’ll sit up and eat a stack with me.

Thursday has been my nemesis. Monday can be fantastic, Tuesday will go exactly as planned, Wednesday may be awesome. Friday, Saturday, and Sunday are great, but Thursday, Oh Thursday. Somehow it never follows the plan.

My MIL comes for dinner on Thursdays. Which means that I really need to get dinner on the table at a set time. Which means I have to leave the office at a set time in order to make dinner to get it on the table at a set time. You get the idea. So I start Thursdays with great intentions. But instead of leaving early like I think I will do, I end up arriving at home at 5:45 to serve dinner at 6.15. Add to that, my golden retriever LOSES his mind when Glenn’s mom is here so I often close him in the kitchen with me (which means the temperature goes up about ten degrees because the doors are closed.) Glenn usually barely gets home–after his mom is already here. Add all this together and I am a wreck, or to use a phrase that makes me laugh and I used to describe myself on a Thursday not too long ago: a hot mess. Truth be told, there have been quite a few Thursday nights with me crying silent tears over the sink or running downstairs “for just a sec'” while I re-group. But it’s getting better. The last two weeks I managed to make dinner ahead or plan something simple so that I am much more pleasant when it comes to actually sitting down with the folks I love. And I’m practicing a lot of “Think this, not that.” (I have all the time I need to accomplish what I need to get done.”) And I’m looking for ways to dig deep without just muscling through. (Have you read “The Gifts of Imperfection”? You totally should.)

So cheers to me on serving a meal without weeping or gnashing of teeth. And cheers to you too. Hope you enjoy the menu…

Monday: I cooked the chipotle pork on Sunday but we didn’t eat it ’til Monday night. Simple and yummy. Cooked in a crock pot. Yes please.

Tuesday: We had a really good salad. The weather was beautiful and salad seemed perfect. I cooked up some chicken and bacon and tossed that with mixed greens, dried cranberries, chopped pecans, pear tomatoes, cucumber, and celery. Then added homemade balsamic vinaigrette. Served this up with crisps of rosemary bread.

Wednesday: I finally made the Cooks Illustrated “Beef and Onion Ragout.” It was delicious and surprisingly uncomplicated. True confessions: I was pronouncing this rag-out. Which made Glenn laugh. Pretty hard. Evidently it’s supposed to sound like ragoo. Oops. Still tasty, either way.

Thursday: Cornish Pasties with cooked carrots, green salad and sourdough rolls. Yum.

Friday: NO DINNER! Dad has been saying for months that I should just tell them if I want to have a night where I don’t make dinner. So I’m taking him up on that tomorrow and heading out for a run with Amy. I am beyond excited. Which just goes to show that there’s something wrong with me. I love Amy and everything but how can I be excited about going for a run!?! Clearly broken. Pretty sure it has something to do with 90 minutes of uninterrupted Amy-time followed by a quick trip for frozen yogurt. Oh. Yeah.

Saturday: Birthday dinner at Delores’. Dad’s birthday is Saturday. He’d like you all to ask him how old he is this week so that he can reply, “I’m in my 70’s.” Because that ends Saturday. We’re having burgers, beans, potato salad, fruit salad, and chocolate cake. Sign me up.
