Christ is risen…He is risen indeed. Today is a lovely day. The sun is shining. The sky is blue. Glenn and I attended the early service at church and there were baptisms. Baptisms are always quite moving to me. Especially kids being baptized. There’s just something about a kid professing faith and lifelong devotion that moves my heart. We hit up Little T’s Bakery after church and they had my favorite drop biscuits with lemon curd (yum!) before we hit Powell’s for a quick glance at the books. Glenn has been “fasting” from book buying for Lent so this was the big day. On our way home we got the groceries we needed for Easter dinner today. (I’m all about planning ahead!) Once we were home, I stuck the au gratin potatoes in the oven and headed out for a run. Four miles today. Ten miles this week. Check. And then food prep and yummy dinner.
My sweet husband helped me prepare our meal. Which was lovely. A god-send really. I was kind of loosing my mind a bit. It was just one of those times when you knock your head against things for a while and suddenly it’s more than you can take. I came up to knock out the cooking and set the table but Dad was playing cards on the table…that I cleaned already…that I wanted to set. I moved into the kitchen to start dinner and Mom came in too…and wouldn’t budge from the sink…even when I tried all of my tricks. So I found Glenn and asked him to talk me down and then brought him in as reinforcements. Yeah for a really great man in my life!
And lest you think that I am totally nontraditional (leftovers or pizza for Easter!?!) here’s what we had…pretty predictable but still really yummy.
Brie with Peach Preserves and Crackers
Mixed Greens Salad with cranberries, pecans and parmesan tossed with HOMEMADE balsamic vinaigrette
Deviled Egg Potato Salad (totally phoned this one in and purchased)
Au Gratin Potatoes
Mom’s Yeast Rolls
I was also planning on strawberry shortcake for dessert but we’re all too full to take it on so we’ll save it for another day.
Hope your Easter was cause for celebration.
